Enchiladas for 2 in 5 easy steps

One of the great things about this recipe is that it scales fantastically well. Regardless if you want to make it for 2 or 12 it is simple to make your adjustments.

Today we’re going to show you how to make these for two in fewer than 45min. Off of work at 5:00 and eating a delicious home cooked meal by 6:30 and even less if you work from home! There are three recipes involved in this, but don’t be daunted they are all very simple. The first recipe is for the tortillas themselves. Granted you could purchase corn tortillas from your grocery store but honestly you can have these made in the amount of time it takes you to get in your car and drive to the store. Depending on how far away the store is you can be done with these before you even get to the store. The second recipe is for the enchilada sauce itself. Yes we are making this from scratch too. The sauce requires the most attention and even then you’re done with it in 10min. The third is not really a recipe and more directions how to assemble and cook.

Preparation: Put your water for the chicken on to begin boiling. Cut your chicken breasts into strips for faster cooking and then add them to your water. Measure all your ingredients and set them aside. This is something you want to do with every recipe. It makes cooking so much easier if you have everything measured and ready to go so you can easily add while cooking. Turn on your griddle to begin heating. Directions: While your chicken is boiling begin making your Enchilada Sauce.

Recipe: Enchilada Sauce

Ingredients

  • 2 cups chicken broth
  • 4 Tbs Chili Powder
  • 1 tsp. ground cumin
  • 2 heaping tsp. garlic powder
  • 3/4 tsp. salt
  • 1 pinch ground cinnamon
  • 1/3 tsp. sugar
  • 5 Tbs. hot water
  • 5 Tbs. white flour

Instructions

  1. In a 2 quart sauce pan add the chicken broth, chili powder, garlic powder, cumin, salt, cinnamon and sugar (the sugar is a little secret to eliminate any bitter taste from the chili powder). Use a whisk to mix everything well. Heat to a boil, reduce heat to a low boil and cook for 3 minutes. Whisk frequently to make sure all spices dissolve. This is important for flavor and a nice smooth sauce.
  2. While the sauce is on a slow simmer/boil, add 5 tablespoons of cold water in a small bowl. With another whisk mix 1 tablespoon at a time of flour. Whisk vigorously to avoid lumps. If you have lumps here, you will definitely have lumps in your sauce.
  3. After 3 minutes of cooking sauce, turn the heat up to high. Very slowly, pour the flour mixture into the boiling sauce. Here you must whisk the sauce vigorously while adding the flour to avoid lumps. After all the flour is added, continue to whisk for one minute. You can turn the heat down to medium during this time. Just make sure the sauce is boiling.
  4. Turn off the heat, this enchilada sauce recipe is done.

Once that is complete your chicken should be almost done. Turn off the heat and let them sit while you make your tortillas

Recipe: Corn Tortillas

Ingredients

  • 1 1/2 Cups Masa
  • Pinch of Salt
  • About 1 cup of Water

Instructions

  1. In a mixing bowl combine Masa and salt. Add water slowly until it forms a ball that is NOT sticky. Pull off 2oz pieces or about the size of a ping pong ball and press with a tortilla press. Cook about 45sec on each side with a griddle you've pre-heated on high.

Wow that was incredibly simple. Yes there are extras so immediately eat one! Now shred your chicken flash it in a pan with spices and lime juice and then set aside. You can use the same griddle that you made your tortillas with as to not dirty anymore dishes then needed. Set-up your assembly line and begin

  • 1 Cup Shredded Cheese
  • Corn Tortillas
  • Enchilada Sauce

Instructions

  1. Cook and shred the chicken
  2. Make your enchilada Sauce
  3. Make your Tortillas
  4. Assemble your Enchiladas (light layer of sauce on the bottom of a small baking pan. Wrap some chicken and cheese in a tortilla and place in the pan seam down. Repeat until pan is full.)
  5. Bake @ 350 for 20 min
