Regardless of your stance on the old pigskin (mmmm.... pigskins) you have to agree that with the start of football season fall and winter aren't too far behind. And right on their tails, like a star corner back all over a premier receiver comes comfort food. You know, the stuff that you cook when it's cold, wet and rainy outside. Well, around the Sumo-house this is the premier go-to comfort food.
The pictures are pretty simple because there really isn't much to this dish. Also, the proportions are... well... strange. I'll tell you how to make a single serving and you just ramp it up for however many ppl you're serving.
Recipe: Bacon Eggs and Okra
Summary: An amazing cold-weather comfort food.
Ingredients
- 1 large potato diced finely
- 1/4 cup diced onion
- 1/4 cup diced okra (frozen is fine)
- 3 strips raw bacon, chopped
- 2 eggs
- 1/4 cup corn meal
- Salt, pepper and garlic to taste.
Instructions
- Mix all ingredients except the eggs.
- Heat up a large skillet and put a teaspoon of vegetable oil in it.
- Once the skillet is hot place all ingredients and let them cook over a low heat until the potatoes are done.
- Turn every 5 minutes.
- Scramble the raw eggs and pour them over the mixture. Cook until eggs are done, plate and serve.
Cooking time (duration): 30-45 minutes

As I said, this is very filling, warming food. So why is this such comfort? Well, the corn meal will glaze up around the bacon and potatoes. It makes for something crunchy and amazing. Add either biscuits or cornmeal and, well... it's pretty close to heaven. Once the temps drop into the 30's around here Robin will have me making this weekly. Enjoy!
