What better way to celebrate H1N1 week than with as much pork as you can handle in one meal. You got your sausage, your ham, & your bacon in one dish that will make you seriously consider having your cholesterol  levels checked soon. 

My last post was from my wife. Honestly you cannot mention pork without either my wife's pork chops or her enchiladas and I was looking forward to her enchiladas so I had her make those.

This one is mine. Pork is pretty much a staple in the Gecko house. We'll have some sort of pork product a few times a month. Usually it's bacon or sausage with breakfast or pork chops for dinner, or some nice ham sandwiches for lunch. Rarely do I do what I did and mix them. Today is a special occasion though and you get Bacon, Sausage, and Ham together in one artery defying dish. So let's get started.


Now my dishes tend to be simple and don't end with a lot of "le's" and rarely do the titles of my dishes have any accents to any letters. I like a good hearty meal perfectly spiced. Today is going to be one of those days. To start let's get down to what you need. This Recipe is for One Skillet so adjust your shopping list accordingly.

Recipe: 3 Little Piggies Skillet

Summary: A skillet with Ham, Bacon, & Sausage.

Ingredients

  • 1 Thick slice of Ham
  • 3 Strips of Thick bacon
  • 4 Sausage Links
  • 2 Medium Potatoes
  • 2 Tbs Butter
  • 1 Clove of Garlic
  • 1/4 cup chopped onions
  • 2 Eggs
  • 1 Cup of Cheese
  • Salt
  • Pepper

Instructions

  1. Preperation: Heat your skillet on my electric stove I turn it to 7! Peel and wash your potatoes and cut into 1/2" cubes, cut your bacon into 1/2" strips, and cut your ham into (everyone say it with me now) 1/2" squares. Chop your onions and mince your garlic.
  2. Take your sausage links and put them in your hot skillet turn them as they brown on the bottom. When two sides are brown throw into the skillet the rest of the meat and your onions. Cook until your sausage is almost done, pull the links out and cut into 6 pieces per link and toss into a bowl. Using tongs remove the rest of the meat from the skillet so you leave the grease in the pan. Once all the meat is removed ...
  3. Toss in your potatoes with your butter. Add some salt and pepper and your garlic. Fry these guys until they are a nice golden brown color.
  4. When your potatoes are almost golden brown take a smaller skillet and make yourself some eggs however you want. I like sunny side up. (Doesn't this just sound healthy?)
  5. Throw your bowl of meat back into the skillet for the last little bit of cooking to get them nice and hot again.
  6. Put your potatoes and meat into a large bowl and sprinkle cheese on top. Then add your eggs on top of that and serve. (And you thought oatmeal stuck to your ribs!)
